The first time I had Kaburga I thought it couldn’t get any better. Then I had it the traditional way fried in ghee and it blew my mind.
Kaburga
This is a delicious cooked and fried chop recipe
Ingredients
- 1 kg Mutton Breast Chops with fat ~ 100 g per person
- 250 ml Milk
- 2 Bay Leaves
- 2 sticks cinnamom
- 3 cloves
- 5-6 Pepper corns
- 2 tsp Saunf Powder
- 1 tsp Ginger powder
- Water to cover in pot
Instructions
- Combine all the ingredients in a large pot and boil the meat until tender and all the liquid evaporates. This can take a couple of hours, don't rush this step.
- Take out the meat pieces and marinades in a mix of yogurt, zeera powder and garam masala. Let it rest for 1 hour
- Broil in the oven until it turns light brown and the fat carmalizes. You can do the same thing on a grill. Traditionally this was pan fried in Ghee, this brings on a whole nother level of taste.
