The first time I had Kaburga I thought it couldn’t get any better. Then I had it the traditional way fried in ghee and it blew my mind.

Kaburga

This is a delicious cooked and fried chop recipe
Prep Time 30 minutes
Cook Time 2 hours
Total Time 2 hours 30 minutes

Ingredients
  

  • 1 kg Mutton Breast Chops with fat ~ 100 g per person
  • 250 ml Milk
  • 2 Bay Leaves
  • 2 sticks cinnamom
  • 3 cloves
  • 5-6 Pepper corns
  • 2 tsp Saunf Powder
  • 1 tsp Ginger powder
  • Water to cover in pot

Instructions
 

  • Combine all the ingredients in a large pot and boil the meat until tender and all the liquid evaporates. This can take a couple of hours, don't rush this step.
  • Take out the meat pieces and marinades in a mix of yogurt, zeera powder and garam masala. Let it rest for 1 hour
  • Broil in the oven until it turns light brown and the fat carmalizes. You can do the same thing on a grill.
    Traditionally this was pan fried in Ghee, this brings on a whole nother level of taste.
