Luch (Deep Fried Puffed Pancake)

Deep Fried Puffed Pancake

Ingredients
  

  • 1 kg Fine Wheat Flour (Bran Removed)
  • 4 tbsp Yogurt
  • 2 tbsp Salt
  • 1 tbsp Fine Sugar

Equipment

  • 1 Round Bottom Deep Pan

Method
 

  1. Add the Yogurt to the Wheat and mix
  2. Add the sugar and salt and continue to knead
  3. As you need add a bit of water so the dough is stiff and plastic. (this will depend on how much liquid comes out of the yogurt)
  4. Let this stand for 2-3 hours to ferment a little bit
  5. Take small walnut size pellets of this dough
  6. Roll into balls between the palms , after putting a little bit of Ghee on each hand to prevent sticking.
  7. On a cutting board roll these balls out into rounds of 5 to 6" diameter using a rolling pan
  8. Deep fry in a round bottom pan with vegetable oil or ghee
  9. The Luch should be soft, white, and not over fried.
  10. Enjoy with Halva or Khir
